welcome friends it's Saturday morning sowe're gonna do another one of our most
viewed recipe video tests on YouTubemake any sense we're going to test one
of the most viewed recipes on YouTubeand today I think I'd like to make
hummus so let's go and we'll filter thatby view count and it looks like the
number one is how to make hummus that'sbetter than store-bought easy hummus
recipe by inspired tastes three pointseven million views so let's take a look
at that recipe huh this is one of those youtube
recipe channels that makes you go totheir blog or their blog I guess to get
the recipe uh looks prettystraightforward let's get started so the
comment section on this video is prettymuch what I had expected and a lot of
the comments stem from the fact thatthey used prepared to tahini
like I am you buy it at the grocerystore a lot of people felt that you
should make the tahini from scratchgrind your own sesame seeds I don't know
about that that might just be a littlebit too far for me I mean at that point
why not just grow your own sesame seedsso the tahini goes in the food processor
first they say you can use a foodprocessor or a blender and then next up
is some juice from a lemon
they say one lemon they actually give anamount 60 mL of lemon juice one large
lemon I'm gonna say that that is thejuice of one large lemon so we put this
in here first and we process it
now one of the problems I'm having whichis not a problem with the recipe at all
it's a problem with me and my equipmentis this food processor is too big for
this amount of stuff that's in thereright now the idea is that they want you
to whip together the tahini and thelemon juice to make it really smooth
unfortunately my food processor justisn't going to do that because there's
not enough to whip up so I'm going tomove on to the next section and hope
that it's not such a big deal so in nextthey say to put in some salt
and cumin and one crushed clove of garlic
and a couple tablespoons of olive oiland I imagine for this one you'd want to
use the really good olive oil I'm justkind of using the one that we always
have here in the Test Kitchen becausewe're out of the really good stuff but
this is some place where the flavour ofthe olive oil I think will really affect
the end flavour of the hummus so thisgoes back on and we whiz it some more
now you should scrape down the bowl afew times and make sure that you get
everything really whizzed together andcombined before we move on to the next
step
okay scrape that down again and the nextstep is to add in the chickpeas the
recipe calls for a can of drained andrinsed chickpeas and you're supposed to
put in half right away and this wasanother part of the of the comment
stream that was pretty negative towardsthis recipe everyone saying you should
only use dried chickpeas that youreconstitute with water and then boil
and cook and then peel I don't know I Ithink canned chickpeas be just fine and
again I think the key here is to scrapedown the sides quite a few times and the
bottom and make sure you get a reallynice smooth homogeneous mixture
we'll add in the second half of thechickpeas and we'll put that on again
now it's pretty thick so theinstructions say to put in a couple of
tablespoons of water to thin it out alittle bit
we'll scrape this down againand then I think after this scrape it
should be another maybe minute or two ofmixing. Okay Jules Oh excited this is the

sort of artful swirl on the top yeah allright now I think the key to this recipe
it to get it really nice and creamy ismix it yes like really mix it don't be
afraid to mix it don't be afraid to overmix it even after creamy mm-hmm that is
really creamy isn't it mm-hmmnow a lot of the lot of the comments
under the video say to peel thechickpeas there's a little skin on the
other things like a lot of work doingthey're not willing to go that far I am
gonna double dip what I know I kind oflike that um strangely maybe it could
use a little more garlic I'm gonna sayit needs a little of something missed
the girl that's it I think maybe alittle bit more garlic for me maybe for
you too and I touched more lemon juice Ithink a little more acid to balance it
out I would still sit here oh yeah I'mI'm really pleased with this recipe I
think this is better than anything youcan buy in the grocery store for sure
mm-hmm

Ingredients: 1 540 mL can chickpeas, drained and rinsed ** 60 mL (¼ cup) fresh lemon juice (around 1 large lemon) 60 mL (¼ cup) tahini 1 garlic clove, minced 30 mL (2 Tbsp) extra-virgin olive oil 2 mL (½ tsp) ground cumin Salt to taste 30 - 40 mL (2 to 3 Tbsp) water ground paprika, and olive oil for serving Method: In a food processor, whiz the tahini and lemon juice for 1 minute, until smooth and creamy. Scrape down the processor bowl and add the salt, cumin, minced garlic, olive oil, and salt. Whiz for 30 seconds, then scrape down the processor bowl and whiz again until well blended.Add half of the chickpeas to the food processor and whiz for 1 minute. Scrape down the processor bowl, and add remaining chickpeas. Whiz until quite smooth scraping down the processor bowl as needed.While the processor is running add 2 to 3 tablespoons of water until you reach your perfect consistency. Adjust salt as needed.
